The first Sumo Sushi was opened and started by Owner and Master Sushi Chef, Jae Koh in 1998; it was located on Green Valley Parkway and Sunset. From a small Japanese restaurant located in a non descript strip mall, it’s reputation spread quickly through the Las Vegas valley as the “The sushi place, where you could have traditional Japanese nigiri sushi (raw fish served on rice), or innovative sushi rolls that showcased savory french Asian fusion sauces that added flavor profiles to traditional sushi rolls.
